½ cup of unsalted butter, melted

200 g 85%-cocoa dark chocolate, melted gently

With a hand mixer, beat the egg whites until they form soft peaks.

In a separate bowl, beat the egg yolks, castor sugar, almond flour, baking soda, salt cooled butter and chocolate together.

Fold in the egg whites carefully, taking care to preserve the air bubbles and transfer the mixture to a greased or lined 23-cm spring-form tin.

Bake the torte for 30–35 minutes, remove and allow it to cool before serving with some chocolate powder dusted on top.

Health benefits

Almond flour is grain and gluten free, low in carbohydrates and a good source of protein.

85% dark chocolate is crammed full of antioxidants. It is worth highlighting its amazing antioxidant effects on heart health, fighting cancer and mood enhancement.

Gluten & grain free. Paleo friendly. Can be dairy free and vegan friendly if the butter is replaced with coconut oil.
