Well the build up to Halloween is in full swing in Ireland. It is hugely celebrated here and contrary to American beliefs, actually seems to have began in Ireland. Houses are decorated and kids everywhere are raging with excitement. So, Harry requested we make a Pumpkin Pie.(Still debating whether to decorate, uurgh-I prefer Christmas 🙂 )
In true old boring mom fashion, I found a banting recipe – well with all the candy coming up and school mid term approaching – I thought we’d feast and not feel too guilty about it!
It’s pretty rustic, not as pretty as the traditional crust pie, but super easy and delicious. Not a morsel left!
Here’s the recipe – serve warm with a little cream!
P.S. I used the canned pumpkin which is already very sweet, so I felt it could have done with a little less Xylitol. xx
