I’ve been trying a few new foodie things lately and I’m loving these two recipes as you could use them for a twist on brunch, lunch or dinner. The big plus, they’re super easy!
These jumbo chickpea flour pancakes can be filled with bacon and eggs for breakfast, fresh salad ingredients for a vegan lunch or your favourite meat protein for a hearty dinner. The pancakes alone are really hearty and filling.
How can you go wrong with three cheeses!? This zucchini cheesecake is so fresh and delicious. A great dinner side or throw in a little salmon for lunch (perfect with the lemon zest and dill)- intended for the breakfast menu, I think it wins anytime of day!
