3 Easy & Healthy Recipes

Here are 3 recipes I’ve been dying to try and finally did over the weekend! These are all SUPER easy to do – and look impressive when entertaining! 🙂

These breakfast muffins have a few different recipe versions (See another version here) – I just made mine as you would an omelette. Beat Free Range eggs ( I had 5 eggs – came out with 6 muffins) and then add what ever ingredients you fancy into the mixture. I had:

Chunk of smoked bacon from the Hermanus Farmers Market chopped into cubes / cheese / basil / cheri tomatoes halved / salt&pepper. Delicious with a side salad of rocket, avo, olive oil & lemon juice as breakfast,brunch or lunch.

Grease the muffin pans, pour in the mixture and cook +- 15 min or until cooked through. * I didn’t but you may want to pre-cook your bacon a bit.

These crackers are from The Real Meal Revolution Recipe Book and again, are incredibly simple to make and delicious with your favourite cheese. A nutritious way to cut out carbs. Find the recipe over at Wellness Warehouse Here.

Now this is big in the states – Peppermint Bark – usually it’s thin sheets of layered chocolate one breaks up and devours with coffee after dinner. But here’s a healthier version. I used:

70% Lindt Dark Chocolate

Macadamia Nuts

Pistachio Nuts

Cranberries

For the nuts, chop or bash them in a pestle & mortar – you can go quite fine or chunkier, depending on how you like it. Melt the chocolate in a pot over a pot of boiling water. Once the chocolate has melted, mix in the nuts and cranberries, leaving +- 1/3 behind. Spread the mixture on a baking tray lined with wax/parchment paper around 1/2 inch thick. Sprinkle the remaining ingredients on top. Refrigerate for 3 hours at least or over night. I made mine quite chunky. You can experiment with peppermint, granola, different nuts etc You can adapt this recipe easily for banting too by using 70% or higher dark chocolate and leave out the dried fruit etc . . .

Backyard adventures

It was windy, we had the one year old and so we had our UCOOK Valentines Day picnic in the back yard – which was actually so much fun, we had everything we needed on hand and well, the food was fab! Plus we could polish off that delicious bottle of wine included and no one had to drive 🙂

I think these make for a fabulous ice breaker or just general dinner party giggles. Love the idea.

Summer dining

An easy summer dinner I made in the holidays – a recipe I learnt on the Banting Course I did.

For a healthy version of crumbed chicken – use free range chicken,  almond flour and any spices, salt and pepper. Some days I go for more Moroccan or spicy flavours and other days more of a mixed herb vibe. Anything you fancy really. Dip in egg, then into your spiced almond flour and bake. Delicious!

Mio Magic

The Mio Range of Body Care products have to be one of my favourite “Body Care” brands. The packaging, texture and results! Not to mention they strive to have “No Nasties” in their creams. I just love everything about them!

Get Wasited: A little goes a long way – just one pump and you’re on your way to a firmer, flatter tummy. I lost 1 cm while using this product. Ok so I can’t guarantee it’s ALL on the Mio Get Wasted and not incorporating Pilates and banting – but interesting that I dropped another cm while using this – as I’ve not changed much else in my daily routine. I love the fresh, minty fragrance and the slight, cooling tingle it leaves on my skin. Also, how easily it absorbs. Read more on how it works here.

LOVE this super nourishing, thick yet absorbant oil. The Activist Firming Body Oil strengthens and firms the skin – leaving it soft and supple. The texture is amazing! Read how it works here. If you prefer a cream, it also comes in a rich, thick and luscious body butter (Future Proof Firming Active Body Butter) which just feels so pampering and nourishing. Again you’ll find with all these products a little goes a long way. I just want to lather it on THICK though, it just feels so good! A great little investment for the festive season! 🙂 xx
